Grilled Vegetable Nachos with Whipped Montreal GOLD Lemon Goat Cheese
Nachos don’t always need chips to steal the show. These Grilled Vegetable Nachos bring smoky, Cluck & Squeal SEASONED SALT charred veggies to the centre of the plate, then get topped with a creamy whipped goat cheese brightened with lemon and seasoned with Montreal GOLD. It’s fresh, bold, a little fancy, and still completely snackable.


1. Prep & Season
- Prep time: 15 minutes
- Cook time: 20 minutes (plus vegetable grilling time)
- Equipment: Oven-safe serving platter or baking dish
2. Ingredients
The Vegetables
- Your favorite vegetable medley, sliced for grilling (such as zucchini, bell peppers, eggplant, asparagus, or red onion)
- Extra virgin olive oil, for coating
- Cluck & Squeal SEASONED SALT, to taste
The Whipped Goat Cheese Topping
- 200g – 225g soft plain goat cheese (typically found in vacuum-sealed logs)
- 1 to 1 ½ tbsp fresh lemon juice
- 1 tbsp Cluck & Squeal Montreal GOLD Seasoning & BBQ Rub
The Garnish
- Your choice of freshly chopped herbs: flat-leaf parsley, chives, or green onions
Recipe

Prep and Grill the Veggies:

- Toss your sliced vegetable medley in a light coat of extra virgin olive oil and season generously with Cluck and Squeal Himalayan SEASONED SALT.
- Grill the vegetables over direct heat until tender with nice char marks. Remove from the grill and roughly chop or slice into bite-sized pieces if needed.
- Whip the Goat Cheese: In a mixing bowl, combine the soft goat cheese, fresh lemon juice, and Cluck and Squeal Montreal GOLD seasoning. Blend thoroughly until smooth, creamy, and spreadable.
- Preheat the Oven: Set your oven or cooker temperature to 275°F–300°F (135°C–150°C).
Assemble "Nacho" Style:

- On a heatproof platter or oven-safe dish, arrange a layer of your grilled vegetables.
- Dollop pieces of the Whipped Lemon Montreal GOLD Goat Cheese throughout the layer.
- Continue layering the remaining vegetables and cheese, building it up just like a plate of nachos so every bite gets a bit of both.
- Warm Through: Place the dish into the preheated cooker for about 20 minutes, just until the goat cheese gets beautifully warm and starts to soften and melt.
- Garnish and Serve: Carefully remove the hot platter from the oven. Finish with a scatter of fresh parsley, chives, or green onions. Serve immediately while warm!
👉 Can also be served as a cold salad! Chill and finish with a bit of olive oil!
